Real Cream, Real Sugar, Real Ice Cream: Our Ranch Recipe (No Weird Stuff Included)
Summer on the ranch isn’t complete without a batch of homemade ice cream. And while you may not be able to fetch the cream from your own cow in your backyard, there is still a better way.
Three ingredients. No stabilizers, no gums, no ingredients you can’t pronounce. Just cream, sugar, and egg yolks doing what they’ve always done.
That last part matters more than people realize — so before we get to the recipe, let’s talk about what’s usually hiding in a store-bought pint.
What’s Actually in Most Ice Cream?
Take a look at the ingredient label on a typical carton of ice cream and you’ll usually find a handful of additives that have nothing to do with flavor. They’re there for shelf life, texture, and cost — not for you.
Carrageenan is probably the most talked-about one. It’s a thickener pulled from red seaweed, and it’s technically FDA-approved as “generally recognized as safe.” But it’s also been at the center of a real scientific debate for decades — some research has linked it to gut inflammation and digestive irritation, while other studies find no issue at the levels used in food. The confusion partly comes from a related compound, poligeenan, which is a known irritant; food-grade carrageenan is a different (undegraded) form, but the two get lumped together a lot. Bottom line: the science isn’t fully settled, but it’s a strange thing to still be looking for in something as simple as ice cream.
A few other common ones to know:
• Mono- and diglycerides / polysorbate 80 — emulsifiers that keep ice cream smooth and prevent ice crystals, but are highly processed and often derived from partially hydrogenated oils.
• Guar gum & cellulose gum — thickeners that bulk up cheaper ice cream so it needs less actual cream.
• Artificial colors & flavors — because when there’s less real cream and fruit, something has to make it look and taste the part.
None of these are in what we’re about to make. Just cream, sugar, and yolks — the way ice cream was made before it needed a stabilizer aisle.
Our Go-To Ranch Ice Cream Base
Ingredients:
• 5 cups heavy cream (we use fresh raw cream from our herd. If you don’t have access to this, heavy cream skimmed from cream top milk is my suggested substitute. Heavy whipping creams now contain carrageenan and harmful additives.)
• 1/2 cup sugar
• 4 farm fresh egg yolks
Instructions:
1. Add the cream, sugar, and egg yolks to a blender and blend until the sugar is fully dissolved.
2. Pour the mixture into your ice cream machine along with whatever mix-ins you’re using, and churn according to your machine’s instructions.
That’s it. That’s the whole base.
Our Favorite Mix-In Variations
Strawberry: Swap the 1/2 cup of sugar for 1 cup of homemade strawberry puree, and fold in fresh chopped strawberries before churning.

It takes maybe ten minutes of hands-on time and a churn cycle. In exchange, you get ice cream made from real cream, real sugar, and real eggs — nothing to look up, nothing to question, nothing hiding on a label. That’s kind of the whole philosophy around here.
